Harvest & Vinification:

Harvest: 100% by hand, from 23 September to 2 October 2021

Vinification: Traditional maceration in temperature-controlled stainless steel tanks. Grapes are destemmed, extracted with daily pumpovers and daily crushes for 3 weeks, then racked and pressed. Malolactic fermentation occurs in barrel.

Ageing: 18 months in 225-litre French oak barrels: 60% new oak, 20% second-use, 20% third-use
