The Durbanville Slopes Chenin Blanc fruit was initially from Durbanville zone from the cultivate, Groot Phesantekraal. The grapes were collected at ideal readiness when fruit, sugar and corrosive were flawlessly in balance. After being gently crushed with minimal skin contact and separating the juice from the skins, the juice was cold settled for twenty-four hours before it had been racked from its primary lees and a percentage of the sunshine lees was added again for further complexity. The juice was inoculated with a specific yeast strain to capture the fruity aromas, and was allowed to mature for an additional three months after fermentation on fresh lees to make a wine with a fuller mouth feel.
